just a thought*

to most of my friends matt is ‘uncle matt.’  they started calling him that when he graduated and became an adult three years before any of us were even considering growing up.  he started learning things about insurance and cooking and budgets and we gave him a hard time about all of it.  i think he knew that deep down we were all really just impressed and a little intimidated – he probably knew that because of his adult related wisdom or something ;)

looking back on those days i laugh and miss all of my crazy friends but i also see how beneath my jokes i was secretly growing up.  without much experience himself, matt was patiently leading me into adulthood. we spent time learning to cook together and proudly forced down every concoction we created!  we talked about money (something i was rather convinced i didn’t need at all: ‘matt i just want to make art!’ ;) ) and he convinced me that budgeting can be a good thing.  

today we are still not really grown up but thanks to matt we’re at least adult-ish in the necessary parts of life.  he’s still leading me and i still can’t resist an old man joke every now and then, but we’re totally in this real world thing together.  it’s different than i expected, way more fun and free than the rumors suggest.  i’m learning that being an adult doesn’t mean i have to stop watching ‘scrubs’ with friends, eating a handfull of marshmellows at 11:00 pm, or even creating art – and i love it.  

so i guess this post became more serious and contemplative than usual.  sorry for that but it’s the beginning of the month and we spent this morning budgeting for june so i guess adulthood was on the brain.  keep in touch for lucy and grant’s wedding pictures coming soon!  sweet dreams friends! (part of adulthood i kinda like, bedtime!)

healthy attempt

phew! it’s been a whirlwind of engagement sessions lately, huh? well, it’s not letting up this week, and we love that! for today we have anna and ray who have officially made it to our gallery page, check them out!

i’m sure like many of you, matt and i desire to eat relatively healthy. i say relatively because our life here in atlanta certainly doesn’t come without it’s wonderful temptations to throw health aside. gotta love atl.! :) this being said, we at least start off with a nutritious and healthy breakfast each morning, granola. we add yogurt and sometimes fruit and it’s just unbeatable. we were introduced to granola when we worked at a summer camp up in asheville, nc. we were spoiled that summer by the homemade goodness and we spent the next few years searching for a comparable granola…to no avail! the search ended this past august when my obsession with cooking took hold, i became determined to find my own granola recipe. trust me friends, i’ve experimented with the first two pages of recipes that come up when you google ‘granola recipe!’ matt, being endlessly supportive, never complained when it came out like granite or tasted salty. ;) so with matt’s encouragement i did something i’ve never done before or since; i wrote a recipe! it was a feat for sure, and even though it’s ever-changing i’m just proud it exists! so off i go to replenish our personal supply, feel free to join me if you like!

‘mix granola

3 cups oats
¼ cup chopped walnuts*
¼ cup crocanti of soja almond**
¼ cup ground flax seed
¼ cup honey
¼ cup oil
¼ cup water
¼ cup brown sugar
1 tsp vanilla
½ tsp cinnamon
¼ tsp cardamom
¼ tsp nutmeg
¼ tsp salt
1 tbsp white sugar
1 egg

toss oats, sesame seeds, almond crisps, ground flax seed, cinnamon, cardamom, nutmeg, salt, and white sugar

whisk honey, oil, water, brown sugar, vanilla, and egg

pour liquid slowly, stirring at the same time until incorporated. press lightly into a nonstick casserole dish (keep about 1.5 inches thick), bake 1.5 hours at 275. after an hour, turn oven off, leaving the granola to cool (and harden), remove and break up. serve with vanilla yogurt or milk, with fruit and/or honey, or just plain! enjoy!


* almonds and sesame seeds are yummy too!

** no idea what this is. hhaha, i get it here.

disclaimer: we have a weird oven! bake time may be different for you. also, this makes crunchy granola, bake less for a chewier batch.

confession

first and foremost, sally and andrew’s gallery is up on the website!

welcome to my world:

i love to cook. this was going to come out at some point, so here it is. now, you’re might be wondering, why is this a “confession” to admit? <- is not the confession, this is -> i waste more time than anyone i know looking at recipes online. i decide on a main ingredient, google it, click every link on the results page and read them all. from there i regoogle, reclick, and read again. i then combine around 4 recipes, and make up my own. at this point my confession gets worse, and my cheeks (which i really hate to call attention to) get pinker. there is a bit of an unspoken rule at our dinner table, after one bite matt has to say if he loves it or likes it (he never dislikes anything, thank goodness!). this splits us two ways: 1. he likes it, i exclaim, ‘i made it up!’ 2. he pauses, i exclaim, ‘i based this on someone else’s recipe!’ what this says about me, i don’t know, but i feel much better with it out in the open…

in other news, i’m excited to meet my friend bonnie in person this weekend, haha! since they first decided we were shooting their wedding, bonnie and i sent tons of messages and i really do forget sometimes we’ve never met! i love that though, we will all be relaxed and comfortable shooting this weekend. bonnie’s older sister, becky and i keep in touch as well (she actually referred us to bonnie), she described bonnie to me as ‘martha stewart’ so now i think that maybe i should delete my previous paragraph…but i think she’ll understand. anyway, check back for some engagement pics soon!
